Welcome back to Table for One and thank you, as always, for being here! As the summer heats up I notice a craving for fresh and easy recipes, and that’s what I’ve been sharing slightly more of (with lots more to come).

So, in case you missed it, here’s what I’ve been cooking:
Harissa Roasted Aubergines with Tahini Yoghurt
I reckon I only have another week or so of oven recipes left in me before that thing gets switched off for the summer and if you’re in a similar boat then I’d highly recommend using that week to make this sticky baked aubergines! Simultaneously comforting and fresh (my favourite type of meal) these aubergines are roasted with spicy harissa and honey until tender and velvety before being placed on a bed of nutty tahini yoghurt. Totally delicious!
Sticky Halloumi Flatbreads
I think I’m probably right in saying that halloumi is in everyone’s top 5 favourite cheeses and if I’m right in saying that then I’ll be right in saying that this is one of the best ways you can eat it and you simply must try it. Gently pan fried then coated in Ballymaloe Relish and cooked for just a moment until glossy, squidgy and ever so slightly sticky. The flavours in the relish are the perfect match for cheese and when finished with a soft flatbread, creamy tzatziki a quick pickle and a spicy jalapeño it really is heaven on a plate.
Chicken Caesar Smash Tacos
Everyone’s favourite summer lunch, this is a caesar salad reinvented. Instead of croutons you’ve got golden crispy tacos, and instead of pieces of chargrilled chicken I’ve gone with the (potentially slightly overdone) ‘smash taco’ trend. Overdone it may be, but it is also not only really delicious but also this method makes it exceptionally quick to cook. Perfect for hot days in hot kitchens!
Dutch Baby with Strawberries & Cream
It’s not British summer without strawberries and cream, and with Wimbledon upon us why not try something different this year with my single-serve dutch baby with strawberries and ice cream! Essentially a one-pan pancake/Yorkshire pudding cross, this recipe is ridiculously easy but such a treat to eat.
