I’ve felt more than a little lethargic this week (I blame the sun) so this week’s meal plan leans toward recipes that can be left to cook on the hob/in the oven with little hands on time. The flavours still feel fresh to me, while always satiating- trying to avoid getting sunburnt with skin as pale as mine is an exhausting challenge, and one that requires sufficient sustenance.
I have a particular fondness for the prawn toastie I’ve chosen this week. It’s hard not to be delighted by the flavour pay off that comes from such a simple recipe and, as I write in my book, when it comes to bread I really do think that soft, cheap, pre-sliced bread is the way to go here to ensure the correct contrast between soft and crisp.
