Welcome back to Table for One,

and to the sunniest week of the year! I must admit I slightly dread summer in London, the heat is intense and working in a kitchen can be overwhelming (not to mention my skin is practically transparent and will sizzle at the slightest hint of a golden ray). However this first week of May has been so perfect that it’s hard not to feel excited at the potential summer to come.

I’ve felt this summer potential in my recipes this week too, starting with a creamy spring vegetable pasta with asparagus and lots of lemon. It’s bright, light, lemony and completely delicious. I’m leaning more towards veg-focused recipes at the moment and this perfectly highlights the joy of seasonal veg.

There’s also been a cold soba noodle salad, the recipe for which will be coming out this week. Cold noodles haven’t always appealed to me in the past but the appeal for me is in the sauce! This one is zingy and vibrant and nutty and I’ll be making it on repeat this summer.

Finally, my one pot greek lemon chicken and potatoes! Wow this dish is delightful, it has golden chicken skin, soft potatoes baked under the chicken, sweet courgettes, caramelised lemon and fresh basil. You can find the full recipe in my latest youtube video:

And now to this week’s newsletter- this is Meal Plan 21, where I take 5 one pot one portion recipes that use similar ingredients and make a weekly meal plan for you. I include your shopping list (categorised) plus recipe notes, ingredient swaps and tips and tricks for using up leftovers.

I’ve also included dietary swaps to give you ideas for how to make the recipes in this meal plan gluten-free, vegetarian or vegan!
