Over the last couple of weeks I’ve been in Italy and Ireland, which I’ll write about soon but the beautiful sunshine has me craving summer flavours and recipes. This week I’ve shared a tomato and burrata tart that is truly magnificent, especially considering how easy it is. With a fresh but simple anchovy pesto and a generous topping of creamy burrata, this is the perfect summer lunch of dinner.
I’ve also shared a chimichurri pesto pasta using my new single-serve sauce which is available to buy now.
Finally, my latest youtube video is up now- an iteration of a previous substack post, this video share my top tips & kitchen hacks for cooking for one!
And now to this week’s newsletter- this is Meal Plan 22, where I take 5 one pot one portion recipes that use similar ingredients and make a weekly meal plan for you. I include your shopping list (categorised) plus recipe notes, ingredient swaps and tips and tricks for using up leftovers.
It’s worth noting here that on the recipe page of my website, you can filter by season or mood, so it’s easy to find recipes to make based on how you feel and what you fancy!
I’ve also included dietary swaps to give you ideas for how to make the recipes in this meal plan gluten-free, vegetarian or vegan!
